1 cup cooked, shredded chicken breast
4 ounces cream cheese, softened
1/2 cup buffalo wing sauce (use your favorite brand)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
12 small corn tortillas (or flour tortillas for a softer roll)
1 tablespoon olive oil or cooking spray
Instructions
In a medium bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, garlic powder, and onion powder. Mix until the chicken is fully coated and the mixture holds together.
Warm the tortillas briefly in the microwave (about 15 seconds) to make them pliable and prevent cracking.
Place about 2 tablespoons of the chicken mixture near one edge of a tortilla. Roll the tortilla tightly around the filling. Secure the seam with a toothpick if necessary, though a tight roll often holds.
Lightly brush or spray the outside of each rolled taquito with olive oil or cooking spray. This helps achieve maximum crispiness.
Preheat your air fryer to 375 degrees Fahrenheit (190 degrees Celsius).
Arrange the taquitos in a single layer in the air fryer basket, ensuring they do not touch. You will need to cook in batches.
Air fry for 8 to 10 minutes, flipping them halfway through the cooking time, until they are golden brown and very crispy.
Remove the toothpicks before serving. Serve immediately with ranch or blue cheese dressing.
Notes
For extra crunch, lightly spray the taquitos again halfway through the cooking time.
If using corn tortillas, warming them is essential to prevent breakage when rolling.
You can assemble these ahead of time and freeze them; cook directly from frozen, adding 3-5 minutes to the cook time.
