Make incredibly crispy banana chips in your air fryer coated with a simple cinnamon sugar mix. This method focuses on achieving maximum crunch.

  • 2 firm green bananas (slightly underripe works best)
  • 1 tablespoon coconut oil, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Peel the bananas and slice them very thinly, aiming for 1/16 inch thickness. Use a mandoline if you have one for uniform slices.
  2. Place the banana slices in a bowl of cold water for 10 minutes to remove excess starch. Drain them completely and pat them very dry using paper towels. This step is crucial for crispiness.
  3. In a small bowl, mix the granulated sugar, cinnamon, and salt to create the coating mixture.
  4. In a separate bowl, toss the dried banana slices with the melted coconut oil until lightly coated.
  5. Preheat your air fryer to 300F (150C).
  6. Arrange the oiled banana slices in a single layer in the air fryer basket. Do not overlap them; work in batches if necessary.
  7. Air fry for 8 minutes. Gently shake the basket.
  8. Sprinkle half of the cinnamon sugar mixture evenly over the chips.
  9. Continue to air fry for another 5 to 8 minutes, checking frequently. The chips should be golden brown and firm.
  10. Remove the basket and immediately sprinkle the remaining cinnamon sugar mixture over the hot chips, tossing gently to coat evenly.
  11. Let the chips cool completely in the basket or on a wire rack. They will crisp up further as they cool.

Notes

  • Use firm, slightly green bananas; very ripe bananas will brown too quickly and remain chewy.
  • For extra crispiness, you can lightly spray the chips with oil again halfway through cooking before adding the sugar coating.
  • If your air fryer runs hot, keep the temperature at 290F (145C).
