1 cup (2 sticks) unsalted butter, softened
1 3/4 cups granulated sugar
3 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup apple cider
2 cups peeled, cored, and chopped apples (such as Honeycrisp or Granny Smith)
1/2 cup chopped pecans or walnuts (optional)
For the Glaze: 1 cup powdered sugar
2 tablespoons melted butter
2 tablespoons apple cider
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup bundt pan well.
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a small bowl, mix the sour cream and apple cider together.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Gently fold in the chopped apples and nuts, if using.
Pour the batter into the prepared bundt pan.
Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
Let the cake cool in the pan on a wire rack for 15 minutes before inverting it onto the rack to cool completely.
To make the glaze, whisk together the powdered sugar, melted butter, apple cider, and vanilla extract until smooth.
Drizzle the glaze over the cooled cake.
Notes
Use firm, slightly tart apples like Granny Smith for the best texture that holds up during baking.
You can substitute sour cream with plain Greek yogurt for a similar texture.
For extra spice flavor, add 1/4 teaspoon of ground cloves to the dry ingredients.
