1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder

1 cup finely diced Granny Smith apples
1/4 cup brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch
1 egg white, lightly beaten (for egg wash)
1 tablespoon coarse sugar (for topping)
Instructions
Prepare the apple filling: Combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch in a small saucepan. Cook over medium heat for 5 to 7 minutes, stirring until the apples soften slightly and the mixture thickens. Remove from heat and let cool completely.
Make the cookie dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined into a soft dough.
Preheat your oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
To assemble the cookies, scoop about 1 tablespoon of dough and flatten it slightly in your palm. Place about 1 teaspoon of the cooled apple filling in the center.
Fold the dough over the filling to enclose it completely, pinching the edges to seal. Roll gently into a ball and place it on the prepared baking sheet. Flatten slightly with the bottom of a glass.
Brush the tops of the cookies lightly with the beaten egg white and sprinkle with coarse sugar.
Bake for 10 to 12 minutes, or until the edges are lightly golden.
Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a quicker filling, you can use 1 cup of canned, drained apple pie filling instead of making it from scratch.
If you prefer a traditional pie look, cut small slits in the top of the dough before baking to allow steam to escape.
Chill the dough for 30 minutes before scooping if your kitchen is warm; this helps the cookies hold their shape better during baking.
