Prepare a fresh, crunchy slaw featuring chickpeas coated in a savory sesame ginger dressing. This recipe works well as a light meal or a side dish.

  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/2 cup shelled edamame (cooked or thawed)
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sesame oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce (or tamari for gluten free)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon sriracha (optional)
  • 1 tablespoon toasted sesame seeds, for garnish

Instructions

  1. Place the rinsed and drained chickpeas in a medium bowl. Lightly mash about one-third of the chickpeas with a fork to help the dressing adhere later.
  2. In a large bowl, combine the shredded green cabbage, red cabbage, carrots, sliced red bell pepper, and edamame.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey or maple syrup, grated ginger, minced garlic, and sriracha, if using. This is your dressing.
  4. Pour the dressing over the chickpea and vegetable mixture. Add the chopped cilantro.
  5. Toss all ingredients together until the vegetables and chickpeas are evenly coated with the dressing.
  6. Stir in the lightly mashed chickpeas.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  8. Before serving, toss again and garnish with toasted sesame seeds.

Notes

  • For a gluten free version, use tamari instead of soy sauce in the dressing.
  • You can add 1/4 cup chopped green onions for extra flavor.
  • This slaw keeps well in the refrigerator for up to three days for meal prep.
