Make this impressive, multi-layered dip featuring a creamy avocado base, perfect for serving a crowd at any gathering.

  • 2 large ripe avocados
  • 1 cup sour cream or plain Greek yogurt
  • 1/2 cup salsa, medium heat
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1 small red onion, finely diced
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1 (15 ounce) can refried beans, low fat
  • 1/2 cup black olives, sliced
  • Optional: Chopped tomatoes for topping

Instructions

  1. In a medium bowl, mash the avocados until mostly smooth. Stir in the lime juice, cumin, and salt.
  2. Spread the refried beans evenly over the bottom of an 8×8 inch serving dish.
  3. In a separate small bowl, mix the sour cream (or yogurt) with half of the chopped cilantro. Spread this mixture evenly over the bean layer.
  4. Gently spread the mashed avocado mixture over the sour cream layer.
  5. Sprinkle the shredded cheese evenly over the avocado layer.
  6. Top the cheese layer with the diced red onion, sliced olives, and the remaining cilantro.
  7. If desired, top with chopped tomatoes for color.
  8. Cover the dish and chill in the refrigerator for at least 1 hour before serving to allow flavors to meld.
  9. Serve cold with tortilla chips or vegetable sticks.

Notes

  • To prevent the avocado layer from browning, press a piece of plastic wrap directly onto the surface of the avocado mixture before chilling.
  • You can prepare the bean and sour cream layers one day ahead. Add the avocado and toppings just before serving.
  • For a spicier dip, mix a small amount of diced jalapeƱo into the avocado layer.
