4 large flour tortillas
6 slices bacon, cut into small pieces
4 large eggs
1/4 cup milk or water
1 cup cooked diced potatoes (pre-cooked or leftover)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar or Monterey Jack cheese
2 tablespoons butter or oil
Instructions
Cook the bacon pieces in a skillet over medium heat until crisp. Remove the bacon with a slotted spoon and set aside, leaving about 1 tablespoon of bacon grease in the skillet.
Add the diced potatoes to the skillet with the bacon grease. Cook over medium heat, stirring occasionally, until the potatoes are heated through and slightly browned, about 5 to 7 minutes. Season with salt and pepper. Remove potatoes and set aside with the bacon.
In a bowl, whisk the eggs and milk or water together. Season lightly with salt and pepper.
Add butter or oil to the same skillet over medium-low heat. Pour in the egg mixture. As the edges set, gently push the cooked egg toward the center, tilting the pan so the uncooked egg flows underneath. Cook until the eggs are mostly set but still slightly moist.
Sprinkle the cheese and cooked bacon over the eggs. Cook just until the cheese begins to melt. Remove from heat.
Warm the tortillas briefly in a dry skillet or microwave until pliable.
Assemble the burrito: Place one tortilla on a clean surface. Spoon one-fourth of the egg/cheese mixture down the center. Top with one-fourth of the seasoned potatoes.
Fold the sides of the tortilla inward over the filling. Fold the bottom edge up tightly over the filling, then roll the burrito away from you until completely sealed.
Serve immediately or wrap tightly in foil for later.
Notes
For make-ahead burritos, assemble them completely, wrap tightly in foil, and freeze. Reheat in the oven at 350°F (175°C) for 20-25 minutes, or microwave for 2-3 minutes until heated through.
Use leftover roasted or pan-fried potatoes for the best texture in the filling.
If you prefer firmer eggs, cook them slightly longer before adding the cheese.
