Create a layered, no-bake trifle featuring a chocolate cookie crust, creamy Baileys cheesecake filling, and rich chocolate layers. This dessert is simple to assemble and perfect for parties.

  • 1 1/2 cups chocolate sandwich cookie crumbs (like Oreos)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Baileys Irish Cream liqueur
  • 1 cup heavy whipping cream, cold
  • 1 box (3.9 ounces) instant chocolate pudding mix
  • 2 cups cold milk
  • 2 cups prepared chocolate cake cubes or brownie pieces
  • Optional: Extra Baileys for drizzling

Instructions

  1. Combine the cookie crumbs and melted butter. Press this mixture firmly into the bottom of a large trifle bowl to form the crust. Chill for 15 minutes.
  2. In a large bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and 1/2 cup of Baileys until smooth and creamy. Set aside.
  3. In a separate bowl, whisk the instant chocolate pudding mix with the cold milk until it thickens, about 2 minutes. Fold the pudding mixture into the cream cheese mixture until just combined.
  4. In another bowl, whip the cold heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese and pudding mixture until no streaks remain. This is your cheesecake layer.
  5. Begin layering the trifle in the bowl over the crust. Start with one-third of the chocolate cake cubes.
  6. Spoon half of the cheesecake mixture evenly over the cake layer.
  7. Add another layer of cake cubes, followed by the remaining cheesecake mixture.
  8. Top with the final layer of chocolate cake cubes. If desired, drizzle lightly with extra Baileys.
  9. Cover the trifle and refrigerate for at least 4 hours, or preferably overnight, to allow the layers to set.

Notes

  • Use a 3-quart glass trifle bowl to show off the distinct layers.
  • For a richer chocolate flavor, use dark chocolate sandwich cookies for the crust.
  • If you do not have cake cubes, use crumbled chocolate brownies instead.
  • Make this dessert up to one day ahead for the best flavor and texture.
