Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a baking sheet with parchment paper for easy cleanup.
Pat the salmon fillets dry with paper towels. Place them on the prepared baking sheet.
Rub the tops and sides of the salmon lightly with olive oil. Sprinkle evenly with salt and pepper.
Spread about 2 tablespoons of Boursin cheese evenly over the top surface of each salmon fillet.
If using vegetables, toss them with the remaining lemon juice and place them around the salmon on the baking sheet.
Bake for 12 to 15 minutes, depending on the thickness of your fillets, until the salmon flakes easily with a fork and the cheese is melted and slightly golden.
Remove from the oven and drizzle with fresh lemon juice before serving immediately.
Notes
For extra moisture, place a few thin slices of lemon directly on top of the cheese before baking.
If you prefer a crispier topping, place the baking sheet under the broiler for the last 1-2 minutes, watching closely to prevent burning.
This recipe pairs well with roasted potatoes or a simple side salad.
