2 cups frozen shredded hash browns, thawed and squeezed dry
2 tablespoons melted butter
1/4 teaspoon salt
1/4 teaspoon black pepper
6 large eggs
1 cup milk or half-and-half
1 cup shredded cheese (cheddar or Swiss recommended)
1/2 cup cooked, crumbled bacon or diced ham
1/4 cup chopped onion
1/2 cup chopped spinach (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a 9-inch pie dish.
In a medium bowl, mix the dried hash browns, melted butter, salt, and pepper until evenly coated.
Press the hash brown mixture firmly and evenly into the bottom and up the sides of the prepared pie dish to form the crust.
Bake the hash brown crust alone for 15 minutes until the edges start to look golden brown. Remove from the oven and reduce the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius).
While the crust bakes, prepare the filling. Scatter the cheese, cooked bacon or ham, onion, and spinach (if using) evenly over the bottom of the partially baked crust.
In a separate bowl, whisk together the eggs and milk or half-and-half until well combined. Season lightly with salt and pepper.
Carefully pour the egg mixture over the ingredients in the hash brown crust.
Bake at 375 degrees Fahrenheit (190 degrees Celsius) for 30 to 35 minutes, or until the center is set and a knife inserted near the center comes out clean.
Let the quiche cool for 10 minutes before slicing and serving.

Squeeze as much liquid as possible from the thawed hash browns; this step is key to a crispy crust.
If you want a firmer crust, you can bake it for an additional 5 minutes before adding the filling.
You can prepare the hash brown crust and filling mixture the night before and refrigerate; add 5-10 minutes to the final bake time if baking directly from the refrigerator.
