3 lbs Russet potatoes, peeled and quartered
1 cup whole milk
8 tablespoons unsalted butter, cut into pieces
1 cup sour cream
1 cup shredded sharp cheddar cheese, divided
1/2 cup grated Parmesan cheese
2 large eggs, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup cooked bacon pieces
2 tablespoons chopped chives, for topping
Instructions
Preheat your oven to 375 degrees Fahrenheit. Grease a 9×13 inch baking dish.
Place the peeled and quartered potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 15 to 20 minutes.
Drain the potatoes well and return them to the hot, empty pot over low heat for one minute to dry out any remaining moisture.
Remove the pot from the heat. Add the butter and milk. Mash the potatoes until smooth.
Stir in the sour cream, 3/4 cup of the cheddar cheese, Parmesan cheese, eggs, salt, and pepper until just combined. Do not overmix.
Fold in the cooked bacon pieces.
Spread the potato mixture evenly into the prepared baking dish.
Sprinkle the remaining 1/4 cup of cheddar cheese over the top.
Bake for 25 to 30 minutes, or until the top is golden brown and the edges are bubbling.
Let the casserole rest for 5 minutes before serving. Garnish with chopped chives.
Notes
For make ahead preparation, assemble the casserole completely, cover tightly, and refrigerate for up to 24 hours. Add 10 to 15 minutes to the baking time if baking directly from the refrigerator.
Use a potato ricer or a hand mixer on low speed for the creamiest texture. Avoid using a food processor, as it can make the potatoes gummy.
You can substitute Gruyere cheese for some of the cheddar for a nuttier flavor.
