Make this creamy potato salad that captures the flavor of a fully loaded baked potato, complete with bacon, cheddar cheese, and chives. This is a perfect, crowd-pleasing side dish for any gathering.

  • 3 lbs Russet potatoes, peeled and cubed
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup buttermilk or milk
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup chopped green onions or chives
  • 2 hard-boiled eggs, chopped (optional)

Instructions

  1. Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until the potatoes are fork-tender, about 10 to 15 minutes. Drain well and let the potatoes cool slightly, about 15 minutes.
  2. While the potatoes cool, prepare the dressing. In a medium bowl, whisk together the mayonnaise, sour cream, buttermilk, mustard, apple cider vinegar, salt, and pepper until smooth.
  3. In a large bowl, combine the slightly warm potatoes, crumbled bacon, shredded cheddar cheese, chopped green onions, and chopped hard-boiled eggs (if using).
  4. Pour the dressing over the potato mixture. Gently fold all ingredients together until the potatoes are evenly coated. Avoid overmixing to keep the potato chunks intact.
  5. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to blend.
  6. Before serving, taste and adjust seasoning if needed. Garnish with extra chives or a sprinkle of cheese.
