Learn the simple technique to bake sweet potatoes in the oven without foil, resulting in a tender, fluffy interior and perfectly caramelized, crispy skin.

Ingredients

Scale
  • 4 medium sweet potatoes (about 8-10 ounces each)
  • 1 teaspoon olive oil
  • 1/2 teaspoon coarse salt

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Scrub the sweet potatoes thoroughly under running water to remove any dirt. Pat them completely dry with a paper towel. Moisture prevents crispy skin.
  3. Prick each sweet potato deeply 6 to 8 times all over using a sharp fork or skewer. This allows steam to escape.
  4. Rub the exterior of each potato lightly with olive oil.
  5. Sprinkle the coarse salt evenly over the entire surface of each potato. The salt helps draw out moisture and crisp the skin.
  6. Place the prepared sweet potatoes directly onto the middle oven rack. Do not use a baking sheet or foil underneath.
  7. Bake for 45 to 60 minutes. Cooking time depends on the size of the potatoes. Start checking for doneness after 45 minutes.
  8. The potato is done when you can easily pierce the center with a fork and the skin is dark and crisp.
  9. Remove from the oven. Slice lengthwise down the center without cutting all the way through. Gently squeeze the ends to fluff the interior flesh.

Notes

  • For meal prep, bake the potatoes ahead of time. Store them whole in the refrigerator for up to 4 days. Reheat in a 350 degree oven for 10 minutes to restore crispness.
  • For a sweeter result, brush the potatoes with a small amount of melted butter or maple syrup during the last 10 minutes of baking.
  • Savory topping ideas include black beans, salsa, Greek yogurt, and chopped cilantro.
  • Sweet topping ideas include cinnamon, brown sugar, pecans, and a small pat of butter.
