- 1 cup unsweetened almond milk
- 1 large ripe banana, frozen
- 1/4 cup chia seeds
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- Optional topping: Sliced banana, crushed graham crackers (or nut-free alternative)
- Combine the almond milk, frozen banana, chia seeds, maple syrup, vanilla extract, cinnamon, and salt in a high-speed blender.
- Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
- Pour the blended mixture into two small bowls or jars.
- Refrigerate for at least 4 hours, or preferably overnight, to allow the chia seeds to fully gel and thicken the mixture.
- Before serving, top with sliced banana and a sprinkle of crushed graham crackers, if desired.
Notes
- For a thicker pudding, increase the chia seeds to 1/3 cup.
- Use a frozen banana for the best cold and creamy texture without adding ice.
- If you do not have a high-speed blender, soak the chia seeds in the almond milk for 30 minutes before blending to soften them slightly.
