1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to your heat preference)
1 tablespoon honey
1 teaspoon rice vinegar
1 clove garlic, minced
1/2 teaspoon grated fresh ginger
Wooden or metal skewers (if using wood, soak them for 30 minutes)
Instructions
If using wooden skewers, soak them in water for at least 30 minutes.
Thread the chicken cubes onto the skewers, leaving a small space between pieces.
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, minced garlic, and grated ginger to make the Bang Bang sauce. Set aside half of the sauce for later use.
Preheat your grill to medium-high heat or preheat your air fryer to 380°F (195°C).
Brush the chicken skewers lightly with vegetable oil and season with salt and pepper.
For grilling: Place skewers on the preheated grill. Cook for 4-5 minutes per side, turning occasionally, until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
For air frying: Place skewers in a single layer in the air fryer basket, working in batches if necessary. Cook for 10-12 minutes, flipping halfway through, until the chicken is cooked through.
During the last 2 minutes of cooking (either method), brush the skewers generously with half of the reserved Bang Bang sauce.
Remove the skewers from the heat. Brush with the remaining reserved sauce just before serving.
Notes
For extra flavor, marinate the chicken in half of the sauce mixture for 15 minutes before skewering.
If you prefer a slightly charred exterior, briefly place the sauced skewers under the broiler for 1 minute after grilling or air frying.
Garnish with sliced green onions or sesame seeds before serving.
