1.5 lbs salmon fillet, skin removed, cut into 1-inch cubes
1 tablespoon olive oil
1/2 cup panko breadcrumbs
1/4 cup cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to your spice preference)
1 tablespoon honey or maple syrup
1 teaspoon rice vinegar
1 clove garlic, minced
Instructions
Prepare the salmon: Pat the salmon cubes dry with paper towels. In a medium bowl, toss the salmon cubes with olive oil.
Coat the salmon: In a separate shallow dish, mix the panko breadcrumbs, cornstarch, salt, and pepper. Toss the oiled salmon cubes in the breadcrumb mixture until fully coated.
Air fry the salmon: Preheat your air fryer to 400°F (200°C). Place the coated salmon bites in a single layer in the air fryer basket, working in batches if necessary. Cook for 8 to 10 minutes, flipping halfway through, until crispy and cooked through.
Make the sauce: While the salmon cooks, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and minced garlic in a small bowl until smooth.
Toss and serve: Place the hot, crispy salmon bites in a large bowl. Pour about half of the Bang Bang sauce over the bites and gently toss to coat. Add more sauce as desired.
Serve immediately over rice or with a side of steamed vegetables.
Notes
For extra crispiness, you can lightly spray the coated salmon bites with cooking spray before air frying.
If you do not have an air fryer, you can bake these at 425°F (220°C) for 12-15 minutes.
Serve these salmon bites over rice bowls topped with sliced green onions and sesame seeds.
