1 lb salmon fillet, skin removed and cut into 1-inch cubes
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup panko breadcrumbs
1/4 cup cooked white rice or brown rice (for the bowl base)
1 cup shredded cabbage and carrot mix (slaw)
1 green onion, sliced (for garnish)
1 teaspoon sesame seeds (for garnish)
For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to your spice preference)
1 teaspoon honey or maple syrup
1 teaspoon rice vinegar
Instructions
Preheat your air fryer to 400°F (200°C). If baking, preheat oven to 425°F (220°C).
In a medium bowl, toss the salmon cubes with olive oil, salt, and pepper.
Place the panko breadcrumbs in a shallow dish. Toss the seasoned salmon cubes in the panko until lightly coated on all sides.
If air frying, place the salmon bites in a single layer in the air fryer basket. Cook for 8 to 10 minutes, shaking the basket halfway through, until crispy and cooked through. If baking, arrange on a parchment-lined baking sheet and bake for 12 to 15 minutes.
While the salmon cooks, prepare the sauce. Whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a small bowl until smooth.
In a large bowl, gently toss the hot, cooked salmon bites with about half of the Bang Bang sauce until evenly coated. Add more sauce if you prefer a heavier coating.
Assemble the bowls: Divide the cooked rice between two bowls. Top the rice with the shredded cabbage and carrot mix. Arrange the sauced salmon bites over the vegetables.
Garnish the bowls with sliced green onion and sesame seeds. Serve immediately.
Notes
For extra crispy salmon without an air fryer, pan-fry the panko-coated bites in a thin layer of hot oil until golden brown on all sides.
You can substitute the rice with quinoa or cauliflower rice for a different base.
Make the Bang Bang sauce ahead of time; it keeps well in the refrigerator for up to one week.
