  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup beer (lager or pale ale recommended)
  • 1/4 cup whole milk
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper

Instructions

  1. Shred both cheeses and set them aside.
  2. In a medium saucepan over medium heat, melt the butter.
  3. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  4. Slowly whisk in the beer until the mixture is smooth. Cook for about two minutes until it thickens slightly.
  5. Whisk in the milk, Dijon mustard, garlic powder, and cayenne pepper. Heat until the mixture just begins to simmer.
  6. Reduce the heat to low. Add the shredded cheese one handful at a time, stirring continuously until each addition is fully melted and smooth before adding the next batch. Do not let the mixture boil.
  7. Once all the cheese is incorporated and the dip is smooth and creamy, remove it from the heat.
  8. Serve immediately with soft pretzels, chips, or vegetables.
