Make this easy, crunchy broccoli salad with a creamy dressing. It is perfect for potlucks, picnics, or as a make-ahead side dish.

Ingredients

  • 6 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked, crumbled bacon
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup sunflower seeds
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup granulated sugar
  • 1/2 small red onion, finely chopped

Instructions

  1. In a large bowl, combine the broccoli florets, cheddar cheese, crumbled bacon, raisins or cranberries, sunflower seeds, and chopped red onion.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth. This is your dressing.
  3. Pour the dressing over the broccoli mixture. Toss gently until all ingredients are evenly coated.
  4. Cover the bowl and refrigerate for at least 1 hour before serving. This allows the flavors to blend and the broccoli to soften slightly while remaining crunchy.
  5. Stir well before serving.

Notes

  • You can prepare the dressing up to two days in advance and store it in the refrigerator.
  • For the best texture, chop the broccoli into small, bite-sized pieces.
