A simple recipe for sweet and savory roasted carrots coated in a honey, garlic, and butter glaze.

  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the cut carrots on a large baking sheet.
  3. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined.
  4. Pour the glaze mixture over the carrots and toss them until they are evenly coated.
  5. Spread the carrots in a single layer on the baking sheet.
  6. Roast for 20 to 25 minutes, stirring halfway through, until the carrots are tender and slightly caramelized.
  7. Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the glaze mixture.
  • If your carrots are very thick, cut them into smaller pieces to ensure even cooking.
  • You can substitute maple syrup for honey if desired.
