Make rich, smooth peanut butter fudge without turning on your stove. This simple recipe uses few ingredients for a quick, melt-in-your-mouth treat.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, beat the softened butter until smooth using an electric mixer.
  3. Add the peanut butter to the butter and mix until fully combined and creamy.
  4. Gradually add the sifted powdered sugar, mixing on low speed until incorporated.
  5. Add the vanilla extract and mix until the mixture is uniform and thick.
  6. Press the fudge mixture evenly into the prepared pan.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Lift the fudge out of the pan using the parchment paper overhang. Cut into 1-inch squares before serving.

Notes

  • Sift the powdered sugar before measuring to prevent lumps in your fudge.
  • Use room temperature, softened butter for the smoothest texture.
  • For a richer flavor, use natural peanut butter, but drain off any excess oil first.
