Make a sweet and savory grilled cheese sandwich using creamy brie, fresh blueberries, and a hint of thyme, finished with a honey drizzle.

Ingredients

  • 2 slices sourdough bread
  • 2 tablespoons unsalted butter, softened
  • 3 ounces brie cheese, sliced
  • 1/4 cup fresh blueberries
  • 1 teaspoon fresh thyme leaves
  • 1 tablespoon honey
  • 1 teaspoon balsamic glaze (optional)

Instructions

  1. Spread butter evenly on one side of each slice of sourdough bread.
  2. Place one slice of bread, butter-side down, in a non-stick skillet over medium heat.
  3. Layer half of the brie slices on the bread in the skillet.
  4. Scatter the fresh blueberries and thyme leaves over the cheese.
  5. Top with the remaining brie slices and the second slice of bread, butter-side up.
  6. Grill for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melted.
  7. Remove the sandwich from the skillet.
  8. Slice the sandwich in half. Drizzle the top with honey and balsamic glaze, if using, before serving immediately.

Notes

  • Use firm, slightly underripe blueberries to prevent them from breaking down too much during cooking.
  • If you do not have fresh thyme, you can omit it or use a tiny pinch of dried thyme.
  • For an extra gooey center, use room temperature brie.
