Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
Prepare the cookie dough: In a large bowl, cream together 1 cup softened butter, 1 cup granulated sugar, and ¾ cup brown sugar until light and fluffy. Beat in 2 eggs one at a time, then stir in 1 teaspoon vanilla. In a separate bowl, whisk together 1 ¼ cups flour, baking soda, and ½ teaspoon salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in 1 cup chocolate chips. Set aside.
Prepare the brownie batter: In a medium saucepan, melt ½ cup butter over low heat. Remove from heat and whisk in ¾ cup granulated sugar. Whisk in 2 eggs and 1 teaspoon vanilla.
In a separate bowl, whisk together ½ cup flour, cocoa powder, and ¼ teaspoon salt. Add the dry ingredients to the wet ingredients and mix until smooth. Stir in the chopped chocolate.
Assemble the bars: Spread half of the cookie dough evenly over the bottom of the prepared pan.
Carefully spoon or dollop the brownie batter over the cookie layer. Use a knife or offset spatula to gently spread the brownie batter to cover the cookie layer.
Drop small spoonfuls of the remaining cookie dough randomly over the top of the brownie batter. Use a knife to lightly swirl the cookie dough into the brownie layer for a marbled effect.
Bake for 30 to 35 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
Let the brookies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Cut into squares.
Notes
For a fudgier brownie center, slightly underbake the bars.
Use high-quality cocoa powder for a richer chocolate flavor.
Chill the dough slightly if it seems too soft before spreading it in the pan.
