1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 tablespoon olive oil
1 can (10.5 ounces) condensed cream of chicken soup
1 can (10.5 ounces) condensed cream of mushroom soup
1 cup uncooked long-grain white rice
1 cup chicken broth
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup frozen broccoli florets (optional)
2 cups shredded cheddar cheese, divided
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, toss the cut chicken pieces with olive oil, salt, pepper, onion powder, and garlic powder.
In the prepared baking dish, combine the seasoned chicken, cream of chicken soup, cream of mushroom soup, uncooked rice, and chicken broth. Stir well to mix all ingredients evenly.
If using, stir in the frozen broccoli florets.
Cover the baking dish tightly with aluminum foil.
Bake for 45 minutes.
Remove the foil. Sprinkle 1 cup of the shredded cheddar cheese over the top of the casserole.
Return the dish to the oven, uncovered, and bake for an additional 10 minutes, or until the cheese is melted and bubbly and the rice is tender.
Let the casserole rest for 5 minutes before serving. Top with the remaining 1 cup of cheese if desired.
Notes
You can substitute cream of celery soup for the cream of mushroom soup if you prefer.
For a richer flavor, use cooked, shredded chicken instead of raw chicken pieces; reduce the initial covered baking time to 30 minutes.
Use pre-cooked rice to significantly cut down on the total cooking time.
