Make this simple, baked casserole using quinoa, mixed vegetables, and sharp cheddar cheese for a satisfying vegetarian meal.

  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup frozen peas
  • 1/2 cup milk (any type)
  • 2 large eggs, lightly beaten
  • 1 1/2 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking dish.
  2. Rinse the quinoa well. Combine the rinsed quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until all liquid is absorbed. Fluff with a fork and set aside.
  3. While the quinoa cooks, heat the olive oil in a skillet over medium heat. Add the onion and cook until soft, about 5 minutes. Add the garlic, broccoli, and carrots. Cook for 5 minutes until vegetables begin to soften. Stir in the frozen peas during the last minute.
  4. In a large bowl, whisk together the milk, eggs, 1 cup of the shredded cheese, salt, and pepper.
  5. Add the cooked quinoa and the cooked vegetable mixture to the egg mixture. Stir gently until everything is combined.
  6. Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of cheese over the top.
  7. Bake for 25 to 30 minutes, or until the casserole is set and the cheese on top is melted and lightly browned. Let it rest for 5 minutes before serving.

Notes

  • For a gluten-free dish, confirm your vegetable broth is certified gluten-free.
  • You can substitute Gruyere or Monterey Jack cheese for part of the cheddar.
  • Prepare the mixture up to the baking step, cover, and refrigerate for up to 24 hours. Add 5-10 minutes to the baking time if baking directly from the refrigerator.
