1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
1 lb fresh green beans, trimmed
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup soy sauce (low sodium preferred)
1/4 cup honey
2 tablespoons water
1 tablespoon cornstarch
1 teaspoon grated fresh ginger
Pinch of red pepper flakes (optional)
Instructions
In a small bowl, whisk together the soy sauce, honey, water, cornstarch, ginger, and red pepper flakes until smooth. Set the sauce aside.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken pieces to the hot skillet and cook until browned on all sides and nearly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Add the minced garlic to the same skillet and cook for 30 seconds until fragrant.
Add the trimmed green beans to the skillet. Cook, stirring occasionally, for 4-6 minutes until they are bright green and slightly tender-crisp.
Return the cooked chicken to the skillet with the green beans.
Pour the prepared honey garlic sauce over the chicken and green beans.
Bring the sauce to a simmer, stirring constantly, until the sauce thickens enough to coat the chicken and vegetables, about 1-2 minutes.
Remove from heat and serve immediately.
Notes
If you prefer chicken thighs, substitute them for the breasts; adjust cooking time slightly as thighs may take a few minutes longer to cook through.
For extra flavor, garnish with toasted sesame seeds before serving.
If you do not have fresh ginger, you can substitute 1/2 teaspoon of ground ginger, though fresh is recommended.
