  • 1 pound rotini pasta
  • 2 cups cooked, chopped chicken breast
  • 1 head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 cup mayonnaise
  • 1/4 cup water (or more, for thinning)
  • Salt and black pepper to taste
  • 1 cup croutons (optional)

Instructions

  1. Cook the rotini pasta according to package directions. Drain the pasta and rinse with cold water to cool it quickly. Set aside.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, Worcestershire sauce, and mayonnaise. Add water slowly until you reach your desired creamy consistency. Season with salt and pepper.
  3. In a large bowl, combine the cooled pasta, chopped chicken, and chopped romaine lettuce.
  4. Pour the Caesar dressing over the pasta mixture. Toss gently until everything is evenly coated.
  5. Stir in the grated Parmesan cheese.
  6. If using, add the croutons just before serving to keep them crisp.
  7. Chill for at least 15 minutes before serving for best flavor, or serve immediately.
