1 tablespoon vegetable oil
1 pound ground chicken
4 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/2 cup chopped yellow onion
1 (8 ounce) can water chestnuts, drained and chopped
1/4 cup hoisin sauce
2 tablespoons soy sauce (or tamari for gluten-free)
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 cup chopped green onions, white and green parts separated
1 head butter lettuce or iceberg lettuce, leaves separated and washed
Instructions
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the ground chicken to the skillet and cook, breaking it up with a spoon, until browned, about 5 to 7 minutes. Drain off any excess grease.
Add the minced garlic, minced ginger, and chopped yellow onion to the skillet. Cook for 2 minutes until fragrant.
Stir in the chopped water chestnuts, hoisin sauce, soy sauce, rice vinegar, and sesame oil. Mix well to coat the chicken evenly.
Cook for 3 to 5 minutes, stirring occasionally, until the sauce thickens slightly.
Remove the skillet from the heat. Stir in the white parts of the green onions.
Spoon the chicken mixture into the prepared lettuce cups.
Garnish with the green parts of the green onions before serving.
Notes
For a low-carb or keto option, check your hoisin sauce label, as some brands contain added sugar.
You can substitute ground turkey for ground chicken if desired.
