A simple, one-pan recipe for a creamy baked orzo dish featuring chicken, perfect for a weeknight dinner.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 3 cups chicken broth
  • 1 (10.5 ounce) can cream of chicken soup
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Season the chicken pieces with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken and cook until lightly browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  4. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the dry orzo pasta, chicken broth, cream of chicken soup, heavy cream, and Italian seasoning. Bring the mixture to a simmer, stirring constantly.
  6. Return the partially cooked chicken to the skillet.
  7. Cover the skillet with foil and transfer it to the preheated oven. Bake for 20 minutes.
  8. Remove the dish from the oven. Stir the mixture well. Sprinkle the mozzarella and Parmesan cheese evenly over the top.
  9. Return the dish to the oven, uncovered, and bake for another 5 to 10 minutes, or until the cheese is melted and bubbly and the orzo is tender.
  10. Let the casserole rest for 5 minutes before serving.

Notes

  • For a brighter flavor, add the zest of one lemon to the liquid mixture before baking.
  • You can substitute heavy cream with whole milk for a slightly lighter result.
  • If you do not have an oven-safe skillet, transfer the cooked onion mixture and raw orzo to your prepared baking dish before adding the liquids and baking.
