A simple, comforting casserole that tastes like chicken pot pie but uses convenient biscuits for a quick weeknight meal.

  • 2 cups cooked, shredded chicken (rotisserie works well)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup shredded cheddar cheese (optional)
  • 1 (10 ounce) package refrigerated biscuit dough

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the flour, thyme, salt, and pepper. Cook for 1 minute, stirring constantly.
  4. Gradually whisk in the chicken broth and milk until the mixture thickens slightly.
  5. Stir in the cream of chicken soup, shredded chicken, peas, and corn. Cook until heated through. If using cheese, stir it in now until melted.
  6. Pour the chicken mixture into the prepared baking dish.
  7. Arrange the refrigerated biscuit dough pieces evenly over the top of the filling.
  8. Bake for 20 to 25 minutes, or until the biscuits are golden brown and cooked through and the filling is bubbly.
  9. Let the casserole rest for 5 minutes before serving.

Notes

  • You can substitute crescent roll dough for the biscuits if you prefer a different topping texture.
  • For extra flavor, add 1/4 cup of chopped fresh parsley to the filling mixture.
  • This casserole freezes well before baking; cover tightly and freeze for up to three months. Thaw overnight in the refrigerator before baking.
