20-Minute Garlic Soy Chicken Zucchini Stir Fry

Make this fast and simple chicken zucchini stir fry for a healthy weeknight meal ready in under 20 minutes.

Ingredients

  • 1 pound boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 medium zucchinis, halved lengthwise and sliced
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons water
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the sauce by whisking together soy sauce, water, honey, ginger, and black pepper in a small bowl. Set aside.
  2. Heat the olive oil in a large skillet or wok over medium-high heat.
  3. Add the chicken pieces to the hot skillet and cook for 5 to 7 minutes, stirring occasionally, until browned and cooked through. Remove the chicken from the skillet and set it aside.
  4. Add the minced garlic to the same skillet and cook for 30 seconds until fragrant. Do not let it burn.
  5. Add the sliced zucchini to the skillet. Stir fry for 4 to 5 minutes until the zucchini is tender-crisp.
  6. Return the cooked chicken to the skillet with the zucchini.
  7. Pour the prepared sauce over the chicken and zucchini. Toss everything together and cook for 1 to 2 minutes until the sauce thickens slightly and coats the ingredients.
  8. Serve immediately.

Notes

  • For a gluten-free option, substitute tamari for the soy sauce.
  • You can add 1/2 cup of sliced mushrooms or bell peppers with the zucchini for extra vegetables.
  • Serve this stir fry over brown rice or cauliflower rice.
