A simple, refreshing salad combining chickpeas, cucumber, feta cheese, and fresh herbs, dressed with a bright lemon vinaigrette. This recipe requires no cooking.

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1 large English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil (for dressing)
  • 2 tablespoons fresh lemon juice (for dressing)
  • 1 teaspoon dried oregano (for dressing)
  • 1/2 teaspoon salt (for dressing)
  • 1/4 teaspoon black pepper (for dressing)

Instructions

  1. Combine the rinsed chickpeas, diced cucumber, halved cherry tomatoes, crumbled feta cheese, chopped red onion, and fresh parsley in a large bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper to make the vinaigrette.
  3. Pour the dressing over the salad ingredients.
  4. Gently toss all ingredients together until evenly coated.
  5. Serve immediately, or chill for 15 minutes to allow flavors to meld.

Notes

  • You can prepare the dressing up to two days ahead and store it in the refrigerator.
  • For best texture, add the dressing just before serving if you plan to store leftovers.
  • Substitute mint for parsley for a different fresh flavor profile.
