A recipe for juicy chicken thighs coated in a smoky, sweet, and spicy chipotle honey glaze. This recipe is simple to prepare for a weeknight meal.

  • 6 bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1/2 cup honey
  • 2 tablespoons adobo sauce from canned chipotles in adobo
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with foil.
  2. Pat the chicken thighs dry with paper towels. Rub them all over with olive oil, salt, and pepper.
  3. In a small bowl, whisk together the honey, adobo sauce, apple cider vinegar, smoked paprika, and garlic powder to create the glaze.
  4. Place the chicken thighs on the prepared baking sheet. Brush half of the honey chipotle glaze over the tops of the thighs.
  5. Bake for 20 minutes.
  6. Remove the pan from the oven and brush the remaining glaze over the chicken.
  7. Return the chicken to the oven and bake for another 10 to 15 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) and the skin is crispy.
  8. Let the chicken rest for 5 minutes before serving.

Notes

  • If you prefer grilling, cook over medium heat, turning often, until cooked through, brushing with the glaze during the last 10 minutes of cooking.
  • Adjust the amount of adobo sauce if you prefer less heat.
  • For extra crispy skin, broil for the last 1-2 minutes, watching closely to prevent burning.
