Prepare a fast and flavorful shrimp bowl featuring smoky chipotle seasoning, bright lime marinade, and fresh toppings over cilantro-lime rice.

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1/4 cup fresh lime juice
  • 2 tsp chipotle powder
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups cooked white rice
  • 1/2 cup chopped fresh cilantro
  • 1 lime, juiced (for rice)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 avocado, sliced
  • 1/4 cup sour cream or Greek yogurt (for crema)
  • 1 tbsp lime juice (for crema)

Instructions

  1. In a bowl, combine the shrimp, 1 tbsp olive oil, lime juice, chipotle powder, cumin, salt, and pepper. Toss to coat and let marinate for 10 minutes.
  2. Prepare the cilantro lime rice: In a medium bowl, mix the cooked rice with chopped cilantro, 1 tbsp olive oil, and the juice of 1 lime. Set aside.
  3. Prepare the crema: Whisk together the sour cream (or yogurt), 1 tbsp lime juice, and a pinch of salt until smooth.
  4. Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer. Cook for 2-3 minutes per side until pink and opaque. Do not overcook.
  5. Assemble the bowls: Divide the cilantro lime rice among serving bowls. Top the rice with the cooked chipotle lime shrimp, black beans, and corn.
  6. Garnish each bowl with sliced avocado and a drizzle of the lime crema. Serve immediately.

Notes

  • For extra smoky flavor, use 1/2 teaspoon of smoked paprika along with the chipotle powder.
  • If you prefer a spicier dish, add 1/2 teaspoon of cayenne pepper to the shrimp marinade.
  • You can prepare the rice and chop the vegetables ahead of time for faster assembly.
