Make this simple, layered dessert that tastes like classic eclairs without turning on your oven. This recipe uses graham crackers, creamy vanilla pudding, and a rich chocolate glaze.

  • 1 box (14.4 ounces) instant vanilla pudding mix
  • 3 cups cold milk
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1 box (14.4 ounces) graham crackers
  • 1 cup cold water
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the pudding: Whisk the instant vanilla pudding mix and cold milk together in a large bowl for two minutes until slightly thickened. Gently fold in the thawed whipped topping until just combined. Set aside.
  2. Prepare the base layer: Arrange a single layer of graham crackers on the bottom of a 9×13 inch baking dish. You may need to break some crackers to fit the edges.
  3. Layer the filling: Spread half of the pudding mixture evenly over the graham crackers. Top this with a second layer of graham crackers.
  4. Add the remaining filling: Spread the rest of the pudding mixture over the second layer of crackers. Cover the dish with plastic wrap and refrigerate for at least four hours, or preferably overnight, to allow the crackers to soften.
  5. Make the chocolate glaze: In a small saucepan over low heat, combine the chocolate chips, butter, cold water, and vanilla extract. Stir constantly until the mixture is smooth and melted. Do not let it boil.
  6. Glaze the cake: Pour the warm chocolate glaze evenly over the chilled dessert. Spread it quickly to cover the entire surface.
  7. Chill again: Return the cake to the refrigerator for another 30 minutes to allow the glaze to set before slicing and serving.

Notes

  • Use whole milk for the creamiest pudding texture.
  • For easier slicing, run a knife under hot water and wipe it dry between cuts.
  • You can substitute chocolate graham crackers for a deeper chocolate flavor in the base.
