1/2 teaspoon salt

1/4 cup granulated sugar
1 large egg
1/2 cup milk

1/2 cup cubed day-old bread (optional, for texture)

Instructions
Preheat your oven to 375 degrees F (190 degrees C). Line a standard 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, 1/2 teaspoon cinnamon, and 1/4 cup sugar.
In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix. If using bread cubes, fold them in now.
In a small bowl, mix the 1/4 cup sugar and 1 tablespoon cinnamon for the topping.
Fill each muffin cup about two-thirds full with batter.
Dip the top of each filled muffin cup lightly into the cinnamon sugar mixture, coating the surface. Alternatively, sprinkle the topping over the batter.
Bake for 16 to 19 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Using slightly stale or toasted bread cubes helps mimic the texture of soaked French toast.
You can substitute buttermilk for regular milk for a slightly tangier flavor.
For a bakery-style dome, fill the muffin cups slightly higher, about three-quarters full.
