Ingredients
Scale
1 cup warm milk (105-115 degrees F)
2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar
1 large egg, room temperature
1/4 cup unsalted butter, melted
3 cups all-purpose flour, plus more for dusting
1 teaspoon salt
For the Swirl Filling:
1/2 cup unsalted butter, softened
3/4 cup packed light brown sugar
2 tablespoons ground cinnamon
Instructions
Combine the warm milk and yeast in a large bowl. Let stand for 5 minutes until foamy.
Stir in the granulated sugar, egg, and melted butter into the yeast mixture.
In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a shaggy dough forms.
Turn the dough out onto a lightly floured surface and knead for 8 to 10 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, turning once to coat. Cover the bowl with plastic wrap and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
While the dough rises, prepare the filling: In a small bowl, mix the softened butter, brown sugar, and cinnamon until well combined and spreadable.
Gently punch down the risen dough. Turn it out onto a lightly floured surface and roll it into a rectangle approximately 12×18 inches.
Spread the cinnamon filling evenly over the entire surface of the dough, leaving a small 1/2-inch border on one long edge.
Starting from the long edge opposite the clean border, tightly roll the dough into a log. Pinch the seam closed.
Place the dough log, seam-side down, into a greased 9×5 inch loaf pan.
Cover the loaf pan loosely and let it rise again for 30 to 45 minutes, or until the dough has crowned about 1 inch over the rim of the pan.
Preheat your oven to 350 degrees F.
Bake for 30 to 35 minutes, or until the top is golden brown and the internal temperature reaches 200 degrees F.
Remove the bread from the pan immediately after baking and cool completely on a wire rack before slicing.
Notes
For a softer crust, brush the top of the loaf with a little melted butter immediately after removing it from the oven.
If the filling seems too soft to spread, chill it for 10 minutes before applying it to the dough.
Use room temperature ingredients for better yeast activation and dough texture.
