Make restaurant-quality crispy coconut shrimp at home. This recipe includes instructions for frying, baking, or air frying, served with a simple homemade sweet chili dipping sauce.

  • 1 lb large shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1 cup sweetened flaked coconut
  • 1/2 cup vegetable oil (for frying, optional)

Instructions

  1. Prepare the dipping sauce: Combine 1/2 cup sweet chili sauce, 1 tablespoon rice vinegar, and 1 teaspoon lime juice in a small bowl. Set aside.
  2. Set up a three-stage dredging station. Place flour, salt, and pepper in the first shallow dish. Whisk eggs in the second dish. Mix panko breadcrumbs and flaked coconut in the third dish.
  3. Pat the shrimp completely dry with paper towels. This helps the coating stick.
  4. Dredge each shrimp first in the flour mixture, shaking off excess.
  5. Dip the floured shrimp into the egg wash, allowing excess to drip off.
  6. Press the shrimp firmly into the coconut-panko mixture until fully coated on all sides. Place coated shrimp on a wire rack.
  7. To Fry: Heat 1/2 inch of oil in a large skillet over medium-high heat until it reaches 350°F. Fry shrimp in batches for 2-3 minutes per side until golden brown and cooked through. Drain on paper towels.
  8. To Bake: Preheat oven to 400°F. Arrange shrimp on a baking sheet lined with parchment paper. Lightly spray the tops with cooking spray. Bake for 12-15 minutes, flipping halfway, until golden.
  9. To Air Fry: Preheat air fryer to 380°F. Place shrimp in a single layer in the basket (work in batches). Air fry for 8-10 minutes, flipping halfway, until crispy.
  10. Serve the hot coconut shrimp immediately with the prepared sweet chili dipping sauce.

Notes

  • For an air fryer or baked version, lightly spraying the coated shrimp with cooking spray before cooking helps achieve a better golden color.
  • If you prefer a thicker sauce, simmer the dipping sauce ingredients gently for 5 minutes until slightly reduced.
  • Use unsweetened coconut if you prefer less sugar in the coating.
