Make soft, fluffy cookies quickly using only cake mix, Cool Whip, and an egg. These require minimal effort and result in a pillowy texture.

  • 1 box (15.25 oz) cake mix (any flavor)
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1 large egg
  • Powdered sugar, for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the dry cake mix, thawed whipped topping, and the egg. Mix until just combined into a soft dough. Do not overmix.
  3. If using, place powdered sugar in a shallow dish.
  4. Scoop the dough into balls, about 1 tablespoon each. Roll each ball in the powdered sugar, if desired.
  5. Place the dough balls about 2 inches apart on the prepared baking sheets.
  6. Bake for 10 to 12 minutes, or until the edges are lightly set. The centers will look slightly underdone.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Use any flavor of cake mix you prefer; chocolate, vanilla, or spice work well.
  • For crinkle cookies, roll the dough balls generously in powdered sugar before baking.
  • These cookies are best eaten within 2 days for the softest texture.
