Ingredients
Scale
1 cup (2 sticks) unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
3/4 cup unsweetened cocoa powder
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup semi-sweet chocolate chips, melted
1/2 cup colorful candy-coated chocolate chips (sprinkles) for topping
1/2 cup heavy cream (for ganache)
1 cup semi-sweet chocolate chips (for ganache)
Instructions
Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy removal.
In a large bowl, whisk the melted butter and sugar together until combined.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a separate bowl, whisk together the cocoa powder, flour, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Stir in the 1/2 cup of melted semi-sweet chocolate chips.
Spread the batter evenly into the prepared pan.
Bake for 25 to 30 minutes. A toothpick inserted near the center should come out with moist crumbs attached, not wet batter.
Let the brownies cool completely in the pan on a wire rack.
Prepare the ganache: Heat the heavy cream in a small saucepan until it just simmers. Remove from heat.
Place the 1 cup of chocolate chips for the ganache in a heatproof bowl. Pour the hot cream over the chips. Let stand for 5 minutes, then whisk until smooth and glossy.
Pour the ganache over the cooled brownies and spread evenly.
Immediately sprinkle the colorful candy-coated chocolate chips over the wet ganache.
Allow the ganache to set before cutting into squares.
Notes
For an extra fudgy texture, slightly underbake the brownies by about 2 minutes.
Use high-quality cocoa powder for the best chocolate flavor.
If you do not have candy-coated chocolate chips, you can use standard rainbow sprinkles, but the texture will differ slightly.
