  • 1 large egg
  • 1 tablespoon cocoa powder (unsweetened)
  • 1 tablespoon sweetener (e.g., erythritol or maple syrup)
  • 1 teaspoon almond flour
  • 1/4 teaspoon vanilla extract
  • 1 small square (about 5g) dark chocolate chips (optional)

Instructions

  1. Combine the cottage cheese, egg, cocoa powder, sweetener, almond flour, and vanilla extract in a microwave-safe mug or small ramekin.
  2. Mix thoroughly with a fork until the batter is smooth and all lumps from the cottage cheese are mostly incorporated.
  3. Stir in the chocolate chips, if using.
  4. Microwave on high power for 60 to 90 seconds. Cooking time varies by microwave wattage; start with 60 seconds.
  5. Check the center; it should be mostly set but still slightly moist for a fudgy texture. If it is still liquid, microwave in 10-second increments until done.
  6. Let it cool for one minute before eating directly from the mug.

Notes

  • For a lower carb or keto option, use a zero-calorie sweetener and omit any added sugar in the chocolate chips.
