Slow Cooker Cream Cheese Corn Casserole

Prepare this rich and creamy corn casserole easily in your slow cooker. It is a simple, cheesy side dish perfect for potlucks or holiday meals.

Ingredients

  • 1 (15 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8.5 ounce) package corn muffin mix (like Jiffy)
  • 1 cup sour cream
  • 1/2 cup (1 stick) unsalted butter, melted
  • 4 ounces cream cheese, cut into cubes
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Lightly grease the inside of your slow cooker insert.
  2. In a large bowl, combine the creamed corn, drained whole kernel corn, corn muffin mix, sour cream, and melted butter. Mix until just combined; do not overmix.
  3. Fold in half of the shredded cheddar cheese and all of the cream cheese cubes into the batter.
  4. Pour the mixture into the prepared slow cooker.
  5. Sprinkle the remaining half cup of cheddar cheese over the top.
  6. Cover and cook on LOW for 3 to 4 hours, or on HIGH for 1.5 to 2 hours, until the center is set and the top is golden brown.
  7. Serve warm directly from the slow cooker.

Notes

  • You can prepare the batter ahead of time and store it in the refrigerator for up to 24 hours before cooking. Add about 30 minutes to the cooking time if starting cold.
  • For a richer flavor, use sharp cheddar cheese.
  • This casserole is excellent as a make ahead side dish for large gatherings.
