1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup milk
1/4 cup fresh orange juice
1 tablespoon orange zest
1/2 cup powdered sugar (for frosting)
1/4 cup heavy cream (for frosting)
1/4 teaspoon orange extract (for frosting)
Instructions
Preheat your oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch round cake pans.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the softened butter and sugar together until light and fluffy.
Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In a small bowl, combine the milk, orange juice, and orange zest.
Alternate adding the dry ingredients and the wet ingredients to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
Divide the batter evenly between the prepared cake pans.
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
To make the frosting, beat the heavy cream until soft peaks form. Gradually beat in the powdered sugar, orange extract, and a splash of orange juice until you reach a smooth, spreadable consistency.
Once the cakes are completely cool, place one layer on a serving plate. Spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the entire cake.
Notes
For an extra burst of orange flavor, you can use orange-flavored gelatin mixed into the cake batter instead of some of the milk.
Chill the cake for at least 30 minutes before slicing for easier serving.
