One-Pot Creamy Cajun Chicken and Rice Skillet

Prepare a flavorful, creamy Cajun chicken and rice dish cooked entirely in one skillet for easy cleanup.

  • 1 tablespoon olive oil
  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons Cajun seasoning blend
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 2 cups chicken broth
  • 1 cup long-grain white rice, uncooked
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1/2 cup heavy cream
  • 1/2 cup shredded sharp cheddar cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken pieces with 1 tablespoon of the Cajun seasoning, salt, and pepper. Add the chicken to the hot skillet and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
  3. Reduce the heat to medium. Add the chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  4. Add the minced garlic, remaining 1 tablespoon of Cajun seasoning, and thyme. Cook for 1 minute until fragrant.
  5. Stir in the uncooked rice, coating it with the vegetables and spices.
  6. Pour in the chicken broth. Bring the mixture to a simmer, then cover the skillet and cook for 15 minutes, or until the rice is mostly tender and most of the liquid is absorbed.
  7. Stir in the cream of mushroom soup and heavy cream. Return the cooked chicken to the skillet.
  8. Simmer uncovered for 5 minutes, stirring occasionally, until the sauce thickens slightly and the chicken is cooked through.
  9. Stir in the shredded cheddar cheese until melted and the dish is creamy. Taste and adjust seasoning if needed.
  10. Serve hot directly from the skillet.

Notes

  • For a more authentic flavor, use homemade Cajun seasoning instead of store-bought.
  • You can substitute cream of chicken soup for cream of mushroom soup if preferred.
  • Add 1/2 cup of sliced smoked andouille sausage with the onions for extra spice and flavor.
