1 tablespoon olive oil
1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
1 small yellow onion, chopped
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups chicken broth
1 teaspoon dried Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/2 cup shredded Parmesan cheese
1/4 cup frozen peas (optional)
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken and set it aside.
Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 4 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
Stir in the uncooked rice, chicken broth, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
Cover the skillet, reduce the heat to low, and cook for 15 minutes, or until the rice has absorbed most of the liquid. Do not lift the lid during this time.
Return the cooked chicken to the skillet. Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy.
If using, stir in the frozen peas. Cook uncovered for 2 to 3 minutes, or until the peas are heated through and the sauce has thickened slightly.
Serve immediately.
Notes
For a thicker sauce, stir in 1 teaspoon of cornstarch mixed with 1 tablespoon of cold water during the last 2 minutes of cooking.
You can substitute chicken thighs for breasts if you prefer a richer flavor.
Use low-sodium broth to better control the final salt level.
