2 large bulbs garlic
1 tablespoon olive oil (for roasting)
1 tablespoon butter
1 large yellow onion, chopped
2 stalks celery, chopped
4 cups vegetable broth
1 cup heavy cream (or full-fat coconut milk for dairy-free)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Slice the top quarter off each garlic bulb, exposing the cloves. Drizzle the exposed tops with olive oil. Wrap the bulbs loosely in aluminum foil.
Roast the garlic for 40 to 50 minutes, or until the cloves are soft and golden brown. Let them cool slightly.
While the garlic roasts, melt the butter in a large pot or Dutch oven over medium heat. Add the chopped onion and celery. Cook until softened, about 7 minutes.
Squeeze the soft, roasted garlic pulp from the skins directly into the pot. Stir well to combine with the onions and celery.
Pour in the vegetable broth. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15 minutes to allow flavors to meld.
Carefully transfer the soup mixture to a blender, or use an immersion blender directly in the pot. Blend until completely smooth.
Return the pureed soup to the pot over low heat. Stir in the heavy cream, salt, and pepper. If using, stir in the Parmesan cheese until melted. Do not boil the soup after adding the cream.
Taste and adjust seasoning as needed before serving hot.
Notes
For a thicker soup, remove about 1/2 cup of the cooked vegetables before blending, then stir them back in after pureeing.
Serve this soup topped with homemade croutons or a drizzle of good quality olive oil.
If you want a richer flavor, substitute half the vegetable broth with chicken broth.
