4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
1 medium onion, chopped
8 ounces cremini mushrooms, sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup chicken broth
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the chicken breasts on both sides with salt and pepper.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for 5 to 7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove the chicken and set it aside.
Reduce the heat to medium. Add the chopped onion to the same skillet and cook until softened, about 4 minutes.
Add the sliced mushrooms and cook until they release their moisture and brown, about 5 to 7 minutes.
Stir in the minced garlic and dried thyme; cook for 1 minute until fragrant.
Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Let the broth simmer and reduce slightly for 3 minutes.
Stir in the heavy cream and bring the sauce to a gentle simmer.
Reduce the heat to low. Stir in the grated Parmesan cheese until the sauce is smooth and thickened. Taste and adjust seasoning if needed.
Return the cooked chicken breasts to the skillet, nestling them into the sauce. Simmer for 2 minutes to reheat the chicken and coat it thoroughly.
Garnish with fresh parsley before serving.
Notes
Serve this dish over mashed potatoes or egg noodles to soak up the extra sauce.
For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water, then stir this slurry into the simmering cream sauce.
