- 1 cup rolled oats
- 2 cups water or milk (dairy or non-dairy)
- 1 large ripe banana, mashed
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- Optional: 1 tablespoon maple syrup or honey (if needed)
- Combine the rolled oats, water or milk, mashed banana, cinnamon, and salt in a small saucepan.
- Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally.
- Reduce the heat to low once simmering. Continue to cook for 5 to 7 minutes, stirring frequently to prevent sticking and promote creaminess.
- Remove the saucepan from the heat. Stir in the vanilla extract. Taste the oatmeal and add sweetener if desired.
- Let the oatmeal sit, covered, for 2 minutes to thicken slightly before serving.
- Serve immediately with your preferred toppings.
Notes
- For extra creaminess, use milk instead of water, or substitute 1/4 cup of the liquid with Greek yogurt stirred in after cooking.
- Use very ripe bananas for the best natural sweetness and texture.
- To make this recipe vegan, use non-dairy milk.
- For a banana bread flavor, add 1/4 teaspoon of nutmeg along with the cinnamon.
