Follow this recipe to make extremely crispy oven-roasted potatoes flavored with lemon, oregano, and garlic, achieving a fluffy interior and a crisp exterior.

  • 3 lbs Yukon Gold or Russet potatoes, peeled and cut into 1.5-inch chunks
  • 1/2 cup fresh lemon juice
  • 1/2 cup good quality olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup vegetable or chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place the cut potatoes in a large bowl.
  3. In a separate small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper.
  4. Pour the lemon-oil mixture over the potatoes and toss well to coat every piece thoroughly.
  5. Spread the potatoes in a single layer on a large, sturdy baking sheet. Do not overcrowd the pan; use two pans if necessary for maximum crispness.
  6. Pour the broth evenly over the potatoes on the baking sheet. The liquid should cover the bottom of the pan but not completely submerge the potatoes.
  7. Roast for 30 minutes.
  8. Remove the pan from the oven and carefully turn the potatoes using a spatula. Baste them with the pan liquid.
  9. Return to the oven and roast for another 30 to 40 minutes, or until the potatoes are deep golden brown and very crispy. Baste them once more halfway through this second roasting period.
  10. Serve immediately while hot.

Notes

  • For the crispiest results, use starchy potatoes like Russets or Yukon Golds.
  • Do not rinse the potatoes after cutting; the surface starch helps create a crust.
  • Ensure your oven is fully preheated before placing the potatoes inside.
  • If the liquid evaporates before the potatoes are fully cooked, add a splash more broth or water.
