Make easy, crispy sausage roll-ups using puff pastry for a perfect appetizer or snack.

  • 1 package (14.1 ounces) all-butter puff pastry, thawed
  • 1 pound ground pork sausage (such as breakfast sausage)
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup finely grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine the ground sausage, dried thyme, black pepper, and Parmesan cheese, if using. Mix gently until just combined; do not overmix.
  3. Lightly flour a clean work surface. Unfold the thawed puff pastry sheets. If the sheets are rectangular, you may cut them in half lengthwise to create two long strips per sheet.
  4. Divide the sausage mixture evenly into four portions. Roll each portion into a long, thin log, matching the length of your pastry strips.
  5. Place one sausage log along one long edge of a pastry strip. Brush the opposite long edge of the pastry lightly with the beaten egg wash.
  6. Roll the pastry over the sausage log until the edges meet, pressing gently to seal the seam. You should have a long, filled pastry log.
  7. Use a sharp knife to cut the log into 1-inch thick pieces (roll-ups). Place the roll-ups cut-side up on the prepared baking sheets, leaving about 1 inch between each piece.
  8. Brush the tops and sides of all the roll-ups with the remaining egg wash. This helps achieve a golden, crispy finish.
  9. Bake for 18 to 22 minutes, rotating the sheets halfway through, until the pastry is puffed, deeply golden brown, and the sausage filling is cooked through (internal temperature reaches 160 degrees Fahrenheit).
  10. Remove from the oven and let cool on the baking sheets for 5 minutes before serving.

Notes

  • For extra crispiness, prick the top of the pastry lightly with a fork before applying the egg wash.
  • If you prefer a different flavor, substitute the sausage with ground chicken or turkey, adding 1 tablespoon of finely chopped fresh sage.
  • Serve these roll-ups warm with ketchup, mustard, or a sweet chili dipping sauce.
